SMOKED SALMON STUFFED WITH HERBY CREAM CHEESE, POMEGRANATE AND BALSAMIC REDUCTION (10 PORTIONS)


Ingredients for the stuffed salmon:
900 gr Norwegian Smoked Salmon
500 gr Mascarpone
100 gr Olives
100 gr Capers
200 gr Lemon
30 gr Salmon Caviar
30 gr Dill
30 gr Chives
10 gr Salt

Ingredients for the pomegranate and balsamic reduction:
2 pc Pomegranate
20 ml Balsamic Vinegar
50 gr Sugar

Procedure:
1. For the stuffed smoked salmon, on a blender mix all the ingredients together, except the smoked salmon and mix until a smooth paste is achieved. Stiff the layers of smoked salmon and with the help of cling dűfilm shape them into balls shape. Refrigerate for at least 6 hours.
2. For the Pomegranate and Balsamic Reduction, squeeze the juice from the pomegranate and filter. Mix all ingredients together and cook on a low temperature until a thick sauce is achieved.
3. To assembly the plate, using a silicon brush place the suace on the plate. Place on the top the smoked salmon balls and garnish with lemon zest and capers.
